Day 339: lazy January sunday

A lazy January Sunday of sofa snuggles and movies and eating pudding for lunch - double helpings, lots of cream! Day 339 is an apple, quince, sherry and mixed nut crumble, inspired and guided by Nigella’s Apple and Walnut Crumble from How To Eat.

In the spirit of using up opened packets and making the most of what I already had in the cupboards: I used an equal mix of quince and apple for the filling; a rich, sweet cream sherry for steeping the sultanas and softening the fruit; and hazelnuts, walnuts, almonds and pecans in the crumble.

I don’t usually count deviations of this extent (which arguably makes it a different recipe altogether) in the cookalong, but I used the weights and measurements from the recipe - doubling-up, of course - and the idea of nuts in the crumble for the making of it that I just must credit it. And I hope you’ll all allow me to count it, without furious outcry.
