Day 350: otherworldly

Back from a little rest and I return to your feeds today with quite possibly one of the finest creations in existence: Day 350 is Nigella’s Luscious Vegan Gingerbread. It’s dense, sticky, spicy and otherworldly squidgy. Pure joy to unwrap on the 24th hour; and a relief, given the constant nagging from the rest of the house pestering me for a slice every ten minutes.

A dollop of sour crème fraîche and a trickle of dark date molasses (pomegranate molasses also good) sit atop this hefty wodge. It’s also lush (and I may even prefer this) with softly whipped double cream in place of the crème fraîche. Of course, we’re no longer vegan then, but that’s ok for me.

With packed lunches and after school snacking, this didn’t last anywhere near as long as I’d hoped! Everything is on standby to repeat asap.
