Day 352: parcel form

We took our pancakes in parcel form today, stuffed with sweetened curd cheese, baked in a hot oven, sprinkled with icing sugar (hand-ground, may I add, on account of the fact that it wasn’t until plating up that I realised we had no shop-bought) and adorned with cool, tangy sour cream and a glossy, deep purple blueberry sauce. Day 352 is Nigella’s Cheese Blintzes. I must add, this was a joint lunch break effort with hubby.

Sour cream with blueberries is the taste of my childhood - and Norwegian vafler topping of choice (followed closely by butter, sugar & lemon). It always sends me soaring back to hot summers in Norway and blueberry picking in the forest.
