Day 190: warm whispers

Almonds, cream, cinnamon and ginger. I mean, that’s like four of my favourite things to eat in the world. Imagine my delight, therefore, when I stumbled upon Nigella’s Mughlai Chicken during a search - on nigella.com - for what to do with some chicken thigh fillets I had in the freezer.

An easing wave of intense comfort and happy feelings; a nutty and creamy curry with ginger, garlic and cumin at its heart and deep, warm, resonating whispers of clove, cardamom and cinnamon that linger cosily on your tongue long after each mouthful. And I just love all the re-plumped golden sultanas dotted throughout.

A whisper in your ear could be a warm comfort, a mildly erotic suggestion or downright creepy - I guess that depends on who’s doing the actual whispering. In the case of food, however, I use it to describe the subtle, high impact flavours; the kind resulting from the use of a smaller quantity of a particular ingredient(s) that then deepen and amplify as they’re left to rest overnight or longer.
