Day 260 is a friend to those spirits in need of lifting: Nigella’s fried rice leftover suggestion for the Norwegian Pork Ribs (Day 258) in Cook Eat Repeat.
Nigella’s Fried Rice for Norwegian Pork Rib Leftovers
In this one: matchsticks of ginger, spring onion, carrot and garlic; soy sauce, freshly-squeezed lime juice and fermented hot sauce; red peppers, shredded pork and pineapple; and fresh coriander and garlic chives from the garden. Adorned with a fried egg, more herbs and crispy chilli in oil. Also, and this is really good: dry-fried leftover crackling crumbled over the top. A mix of basmati rice (cooked, frozen and thawed) and a blend of Camargue red & wild rices used.
