Day 267: sweet things (and a touch of soppiness)
Every time we gather around the table as a family, I sit back and look at each of our children, one by one, thanking all that is good in this world for blessing our lives with them (trying hard not to well up - with joy and disbelief, still - each time). Then I watch them tucking into their food with unrivalled gusto and smile softly to myself (before then tucking into my own with equal enthusiasm, of course). The time will come when they’ll ask what I’m staring at, but for now I can get away with it and will relish in every second.
Anyway, enough soppiness. On to the food! This week’s midweek treat came in the form of tea and cake, for lunch*: Day 267 is Nigella’s Lemon Tendercake with Blueberry Compote.
Nigella’s Lemon Tendercake with Blueberry Compote
A soft, moist, fluffy cake adorned with a glossy, garnet blueberry compote and silky, snow-white coconut-milk yoghurt icing. A celestial creation. To quote my daughter: it was ‘LICIOUS!
*Camped-up with vintage-style crockery, because why not. I’m only disappointed I didn’t think to get out a doily or two.
