Day 361: sweet heaven

Day 361 is a sweet, heavenly little number: Nigella’s Honey Pie. As delectably rich as this is - and my god is it divine! - one slice is still not quite enough; in fact, hubby was heading in for his third slice in a row shortly after I first pulled it from the fridge. Clotted cream essential for the fully immersive walk-in-heaven experience.

This was recommended by the very lovely Nic Miller for the Final 30 countdown. For much culinary joy, and joy in general, Nic’s Twitter and Instagram are great sources.

Nigella’s Honey Pie

Nigella’s Honey Pie

I’m not going about blaming my tools again, BUT…my oven did have a massive heat surge towards the last 10-15 minutes of cooking time and I had to remove the pie from the oven. Either that or the kids were playing with the oven knobs again; I’ve lost count of the times I’ve set the oven to a specific temperature and then five minutes later it’s burning because the temperature’s been turned up by 60 degrees, or 60 minutes later it’s still raw because they’ve turned the thermostat off! So, there’s a possibility it didn’t set quite right in the middle and is a little too burnished on top, but I had to get it out of the inferno before it was ruined.

The recipe for this is in Simply and on nigella.com (link below).
