Day 101: liquid sunshine

Suddenly a whole bank holiday weekend has passed, as well as three consecutive days of sunshine (hooray!), and it’s already been five days since my last entry. So, in the spirit of catching up, today’s entry is a quick one.

I played out for the day on Sunday; my friend and I spent the day in beer gardens, eating starter-size portions of snacks from place to place; including some fabulous cocktails and food in a new Cuban bar that’s just opened nearby. I don’t know how you manage your hangovers, but sometimes they get the better of me, so I couldn’t have been happier for the inspiration of Nigella’s #RecipeOfTheDay yesterday: Golden Garlic Mayonnaise - not only quick and easy to make, but also fabulous for a BBQ (which is what we had planned for dinner).

I adore mayonnaise. It is the one condiment I couldn’t live without. At school, I asked for it with dinners, lunches, and even breakfasts - on occasion. It wasn’t long before the catering staff knew exactly what I wanted as they saw me approach the side entrance to the canteen; having one of those little metal sundae cups filled with mayonnaise ready and waiting for me. Eventually, they bought me my own catering size tub of the stuff.

I am particular about it: I cannot abide the paper-white, plastic gloop, and my favourite is a Polish mayonnaise - introduced to my life about eight years ago, shortly after meeting my now-husband/then-boyfriend. Despite this undying adoration for mayonnaise, I had never made my own. Until yesterday.

Nigella’s Golden Garlic Mayonnaise

Put everything into your stick blender goblet and let the tool do the work for you. I may have been a little unsteady in measuring the saffron, as we’re almost breaching neon lemon here, but it tasted beautiful.

We enjoyed this dolloped on burgers, with burger gherkins, smoked cheese, tomatoes, lettuce and smoked bacon rashers; all wedged between two soft, bouncy slices of tiger bread.

Aromatically uplifting and warmingly garlicky.

This pot of happy-making liquid sunshine is the result of my first time making homemade mayo! Day 101 is Nigella’s Golden Garlic Mayonnaise, and it was just fabulous on homemade burgers straight off the BBQ. Plus trimmings. I feel I may end up nicknaming this to Sunshine Sauce in our house from now on: it brings joy, warmth, and brightness.
