Day 195: more oven madness
I khow it might look the part, but, trust me, I royally messed this one up. Or, rather, my oven totally messed it up. The outside is overcooked and crunchy and the inside damp and crumbly; its like it’s undercooked, yet dry and falling apart at the same time. And this is absolutely nothing to do with the recipe: I'm sure my eggs weren't large and my buttermilk might have been off as well - which could explain why the cake is falling apart: perhaps there wasn't enough egg to bind it or the buttermilk split in the heat of the oven. But, it tastes lovely - woodsy and lemony - and we will, of course, still eat it. In fact, the hubby's enjoying a slice of it with a cuppa as we speak.
Nigella’s Lemon and Thyme Bundt Cake
Totally took a leaf out of N's book, or rather the local park, with the styling here: inspired by the Autumnal Birthday Cake from How To Be A Domestic Goddess.
You can find the recipe for Nigella’s Thyme and Lemon Bundt Cake on p286 of Simply.
