Day 204: refreshing winter eating
Found some cod fillets in the freezer, and with them I made Nigella’s Hake [any firm white fish] with Bacon, Peas and Cider. As much as I love the rib-sticking, nap-inducing suppers of winter (and I really, really do), this sprightly and bright-tasting supper made for a wonderfully refreshing change from the meats, stews, cheeses, cakes and other belt-busting foods that I seem to be eating in rather large amounts as of late. Of course, to involve the carbs essential for winter plumping, I did serve this with a bowl of very buttery and creamy mashed potato on the side.
Nigella’s Hake with Bacon, Peas and Cider
The sprightliness of crisp, dry cider; the sweetness of summery peas; the saltiness of smoked streaky bacon; and the oceanic freshness of fish fillets. Most refreshing winter eating indeed.
My fish fillets were a little on the small side, so I boosted the bacon, cider and pea quantities - you know, by now, how I love my sauces.
