Day 220: soothing and nostalgic
Salmon fishcakes will always remind me of childhood dinners at my Grandparents'; at 84, my Nan still makes them using tinned salmon whenever there's mashed potato left over (often making mini ones, these days, to serve as a starter with sweet chilli sauce). Day 220 is Nigella's soothing Salmon Fishcakes, which include a gentle - very welcome - nudge of cayenne that my childhood version didn't. I love that matzo crumb, too.
Nigella’s Salmon Fishcakes
For a proper dip in memory lake, we ate them with a big bowl of buttered petits pois (I didn't notice N's recommendation until reading the headnote after planning lunch, but she also recommends this) and ketchup and tartar sauce on the side for dolloping on plates and mopping up with forkfuls of fishcake and peas.
A late-night supper involved one of these wedged between two soft slices of N's O-FSL, crisp lettuce, mayo, a shake of vinegar and sliced burger pickles.
