Day 263: lovely textures
Soft, creamy griddled slabs of aubergine wrapped around a nubbly, salty stuffing and bathed in a rich, sharp tomato sauce: Day 263 is Nigella’s Soft and Sharp Involtini. Had the most wonderful time making these with my daughter (I still pinch myself every time I say or write those words) and they made for a most gorgeous weekend family lunch.

They are juicy, tender and creamy and sing gloriously on the tongue with the sharp and tangy tomato sauce. Love the textures. Juices mopped up with much bread.
