Day 291: mrs stroney’s soup
It might not be everyone's first choice in the middle of a heatwave, but when the weathers hot and sticky it’s comfort and replenishment I want. And this is abundant in both! Day 291 is Nigella’s Minestrone, from How To Eat. Though I feel I must to tell you that thanks to one of my little ones this is now known as Mrs Stroney’s Soup in our house. An index of alternative names may be in order! (I know ‘soup’ is an incorrect addition to ‘minestrone’ but I used it for explanation purposes for the kids.
Nigella’s Minestrone
I have a growing collection of parmesan rinds in the freezer - which I keep forgetting to use - so I was very glad of the prompt in the recipe to use a few of the salty, waxy strips in this. (And I totally gnawed on them once they’d been removed from the pot of bubbling, khaki goodness.)
