Day 292: a comforting concoction
A comforting concoction of some of nature’s finest flora (and fungi) - bolstering lentils, beefy aubergine and hand-picked, home-dried ceps - tossed in generous quantities through a golden tangle of spaghetti: Day 292 is Nigella’s Vegan Spag Bol (more parsley added after photo). It’s like that big hug you get when your favourite aunt comes to visit: it makes you feel uplifted and reassured and you never want it to end.

I made a rather large batch of this for the freezer — portioned out for the nights I might have to work late and hubby needs to feed the kids, or for when I might be caught short with the gremlins emerging at me from the living room at dinner time. I have a large portion frozen in a Tupperware to make a cottage pie-like thing one night too.
