Day 308: weekday treat

A delicious weekday treat and, on account of the fact I made the ragu during a ‘rare-these-days’ peaceful kitchen potter at the weekend, a speedy one at that. Not only is there nothing quite like a short fridge vacation for a ragu or stew, giving that essential downtime for magic to happen and flavours to meld, dinner really was quick to prepare, only taking the seven minutes required to cook the pasta and the two required for the gentle tumble of ragu and ribbon on the night itself. And given that was at the end of a - as always - exhausting Tuesday, it was indeed a welcomed offering of delicious, slurpable bowl food. Day 307 is Nigella’s Pappardelle with Lamb Ragu.

That final, verdant flourish of fresh mint here is wonderful.

I cooked along to this one via the recipe on nigella.com (link below) but I believe there is also a version in Nigellisima (with the curly-edged pasta, mafaldine).
