Day 271: caramel umami
Caramelly umami goodness: Day 271 is Nigella’s Spatchcock Chicken with Miso and Sesame Seeds. Baguette close by for tearing and pressing into salty, sticky juices and conveying them to mouth.

I spatchcocked the chicken right (I think) but I didn’t open the legs out before roasting. Luckily, the skin on the underside of the legs browned in the juices and with the heat from the roasting pan. In fact, it was delightfully sticky, crisp and chewy.
