Day 280: express delicious
It’s ALWAYS a joy to pick up, read and cook from Express. In fact, it’s a loyal, bible-like companion in my life at the moment! Not only is it full of near-instant deliciousness, but we also hear the clear voice, warmth and wit of Nigella resonate across every page. Making this not just a recipe book; it’s an entertainment and comfort too. It’s a sanctuary abrim with everyday family meal ideas that are both delicious and quick to make; a promise I get great pleasure in hearing and knowing I have instant access to at just an arm’s reach from my cooker. (And, with Nigella, we know that promise is truth.)
Nigella’s Chicken Schnitzel with Bacon and White Wine
I went for the herbal hit of dry white vermouth (mainly because I didn’t have any white wine, but I do so love vermouth’s speedy richness offering in cooking) and served it with buttery, dill-y potatoes and a yellow courgette and tenderstem salad on the side (made in a very similar way to Nigella’s Double Courgette and Bean Salad from Summer).
